Gin Cucumber And Corriander Dressing

Gin and cucumber are a made to go together and are also often found with coriander. This simple dressing brings can be whipped up in minutes and adds a new dimension to raw oysters. Just watch how many you have if you have to drive or operate heavy machinery.


1 tbsp cucumber, finely diced

1 tbsp shallot, finely diced

1 tbsp coriander stems, finely sliced

20ml gin

20ml lime juice

20ml lemon juice

1/8 tsp honey

1 pinch salt

5ml olive oil


Mix all ingredients apart from oil together. Add a few drops of olive oil.

Refrigerate for 20 mins. Drizzle over oysters.
